We love Riesling. Every staff party generally begins with a bottle of it - German, in a magnum, one for each end of the table, please. We're blessed to have one of the great Riesling regions in the world nearby in the Clare Valley - one of the most consistently undervalued wines from a region in Australia. Here's our inaugural Polish Hill River Riesling farmed by the wonderful Jaeschke family and the team at Hill River Estate - who are converting biodynamics which is exciting! It's a sublime example of the style - white stone fruit, a litany of citrus and that slate signature that we adore. Bone dry with a decent lick of texture too. We love it.
