The Wine For the People crew have jumped in the cellar to craft their ode to the Number 38 - for those who follow the show know, is the Magic Number for the price of Natural Wine. So we crafted a wine to show our love for those 38 Dollar bottles, inspired by Tavel Rosé - one of the freshest and most fun styles of wine that we adore drinking properly chilled.
So we took some Adelaide Hills Syrah from a Jimmy Watson-winning vineyard and made it in a very un Jimmy Watson way - putting it under Carbonic Maceration for 5 days before crushing it in the morning on whole bunches and pressing in the afternoon, and letting it wild ferment in stainless steel, before it rests there until we bottled it in January. The results are, in a word, lively. Big, juicy raspberries, apple and red cherry, with some Syrah-style spices in the backdrop. It's crunchy, it's devoid of tannin, and it may be the easiest-to-drink red wine that's ever been made in Unico Zelo's 4 walls (and that's saying something).
