A purist Burgundy blend of Pinot Blanc and Chardonnay, grown on slate in steep parcels of the Winningen slope. With the 2023 vintage, Distel replaces our previous single-varietal Pinot Blanc. After early, selective hand-harvesting, the grapes were gently pressed and fermented with wild yeasts in large oak barrels from the Eifel region and in tonneaux. Following a year of aging on the lees in the barrel, a second winter of aging in stainless steel tanks with the fine lees ensued. Bottling without filtration took place in May 2025. In 2019, we planted a small plot of Burgundy vines on the slope known in the village as "Distelberg" (Thistle Hill). When we then learned, almost by chance, that "Chardonnay" derives from the French word for thistle ("le chardon"), the name was decided.
