Tonight's guest needs little introduction in winemaking circles - the eponymous Xavier Bizot - has one of the most amazing stories this industry has to offer - part of the Bollinger family (you know THAT family...from Champagne?) - and also proudly part of another famous winemaking family that needs little introduction: The Crosers - is behind one of the most underrated brands in this country; silently crafting some of the most amazing wines from unlikely places, in unlikely styles - but with an extremely narrow intent and purpose that'll make people sit up to attention now; and well into the future. It's clear that Xavier takes legacy seriously - and we're curious to know, why Australia - and has he managed to see the potential of this land, that we all hope to be.
