One of the most captivating features of Fiano is it's ability to retain a searingly high level of acidity - so much so - that select dry variants can be almost completely unapproachable in their youth. The intention of residual sugar is to balance out this brisk acidity with the aim to craft a wine of inherent balance. Off-Dry styles of white wine around the globe are highly praised for their rareness and technical difficulty in crafting them.
