The Northern Adelaide Hills where our winery is based is littered with vineyards with the propensity to craft incredible Chardonnay. While the temptation is there to be heavy-handed in the use of oak, with this wine we went down the path of crafting something a little more slippery and playful. Plenty of honeydew and lemon blossom, but with crackling mineral acidity and just the right amount of creamy texture to suit prawns or any shellfish, or a classic roast chook. A wine destined for the lunch table.
