It's pretty hard to go past the chance to craft a wine like this when you're presented with a incredible site like Polish Hill River, marbled with blue/grey slate and planted to 25 year-old Dolcetto vines at 450 metres elevation. Whatever your moniker is - Rosé, Rosato, Rosado - it's a distinctive style of wine that is so well-suited to the warm, dry (and mostly seaside) climates that Australian's endure (or celebrate?). This is by no means a cerebral wine. It's a wine of sharing, enjoyment, frivolity - and freedom.
