Make no mistake: Fiano is a high acid wine, especially when picked that wee bit early. The best way to balance that searing, mouthwatering acidity is with sweetness. So - inspired by the worlds rarest and most expensive white wines we crafted our own Off-Dry Fiano - we like to call it Panda Panda. The game the balancing act, being able to literally STOP the ferment, to pair the acidity with the sweetness - and we've balanced this like a samurai sword. Off the base of this alluring honeyed and silken texture, aromas of fresh jasmine and the flavours of fresh lychees are able to captivate the drinker. A supreme example of the style for a variety that we believe is perfectly suited to this winemaking skill.
Only 800 Bottles have been crafted.
